Coconut Macadamia Nut Crusted Salmon

My mother-in-law served this salmon dish one time at her house and I have been needing it's deliciousness in my mouth again. I made it the other day. The Garlic & Olive Oil Spinach dish is Marleen's. We all love it, maybe you will too.

Coconut Macadami Nut Crusted Salmon
4 Salmon filets
1 1/2 Cups Coconut Flakes
1 1/2 Cups Raw Macadamia Nuts
1 teaspoon Salt
1 teaspoon Garlic Herb Seasoning
1/2 Cup Coconut Milk
2 Limes juiced


  • Combine coconut, macadamias, salt and seasoning in food processor. Pulse until mixture is finely ground and crumbly.

  • Combine lime juice and coconut milk.

  • Dip filets in the liquid, then into the coconut mixture to coat heavily.
  • Press and pat the coating into the fish.

  • Heat olive oil (I happened to have coconut oil & used that) in frying pan on medium heat. Fry 4-6 minutes, or until golden brown.

  • Flip just once and fry on the other side until golden brown.

  • Then, poor remaining coconut milk/lime mixture into the pan. Put lid on it and turn heat down for a couple minutes.

  • Serve immediately.

Wilted Garlic Olive Oil Spinach
Wash and dry baby spinach leaves & set aside in large bowl.

Heat olive oil (I'm guessing around 1/4- 1/3 cup depending on how much spinach your using)

Add 3 cloves of minced garlic to oil and cook for a couple of minutes.

Poor hot garlic oil over spinach. Add a squeeze of lemon and salt to taste.

The Spinach salad is really a run off of a recipe of Mom Waite's. Gotta give credit where credits due. You can also put your favorite salad toppings in the salad. Pine nuts, goat cheese, sun-dried tomatoes, whatever your mouth desires. Great foundation salad for many variables.

That sounds SOO good. I need to make that ASAP. I've never tried these yummy recipes. I guess that's what happens when you live afar.
