Eat Your Veggies!

So have you all heard about Jessica Seinfeld's new cookbook? My girlfriend Rachel had to call me up and share this great news. Jessica hides pureed vegetables in tons of "kid friendly" foods. I think this just might be a life changing event in our house.

Eden loves scrambled eggs and loves to help me make them...
Hidden cauliflower puree provides kids with half the daily value for vitamin C. With more than 19 grams of protein per serving, these scrambled eggs pack a powerful protein punch!

INGREDIENTS
2 large eggs
4 large egg whites
1/4 cup reduced-fat sour cream
1/2 cup cauliflower puree
2 Tbsp. grated Parmesan
Pinch of salt
Nonstick cooking spray
1 tsp. olive oil

In a large bowl, whisk together the eggs, egg whites, sour cream, cauliflower puree, Parmesan and salt.

Coat a large nonstick skillet with cooking spray, then set the pan over medium-high heat. When the pan is hot, add the oil. Add the egg mixture, reduce the heat to low, and cook, stirring frequently with a silicone spatula, until the eggs are scrambled—firm but nice and moist—2 to 3 minutes.

I actually saw this on Oprah yesterday (which is strange because I almost never watch Oprah). It's kind of a fun idea, but I prefer just teaching them to eat the real veggies and letting them pop a gummy vitamin every now and then if I'm worried about it! I was glad to hear that she offers her kids real veggies on the side, too, since they're probably not going to have anyone hiding spinach puree in their food when they're 25! I just can't see myself making all these purees every week. I didn't make my own baby food, either--go figure!

I actually tried this 15 years ago with my oldest two. I was obviously not as clever as Mrs. Seinfeld. After thinking I was brilliant for hiding zuchini in my son's quesadilla, I watched as he slowly and methodically spit out every stupid little strand. I did manage to pull off a green bean chocolate cupcake recipe. I also tricked my poor babies into believing that frozen peas were candy. If it works go for it!
